There are 2 sides to this, because there are tons of lazy fast food workers that have 0 work ethic and deserve to be called out.
But, that doesnt give people the right to constantly berate employees.
As a former Chipotle employee, I have to say that tons of people ask for an insane amount of extra portions. So much so that the burrito literally can't be rolled closed, or the lid on the bowl will leak out all the extra ingredients. But when you try to enforce the standard portion sizes and tell the person that more will cost extra, they get super pissy that they aren't getting double the size of a normal (still huge) meal for the same price.

In most cases I've seen, when customers reach over the counter they tell you to not lean over the food because you can cause stuff to fall into the food.

I work at a chipotle and that job is stressful and hard enough without people making it worse, he doesn't deserve to be treated like that. Also the fact that he feels like he needs to do all of this just to get more food is unnecessary. The only things that we don't generally give extra of without cost is meat, guac, and queso. People like this doent even deserve to be served if they are going to act like this and go to these extremes.
Honestly if I was that guy I would just give him the extra portions and then charge him extra for it. Counting every single scoop. If he refuses to pay and has a tantrum call the cops.

Minimum wage for maximum work
As someone who has worked for Chipotle the last 4 years, our portion sizes has always been 4oz for meat. There's no sketchy changes, smaller spoons, smaller bowls or anything. And I can promise that almost every worker gives WAY more than the 4oz portion.
